There are a lot of places to look for student projects here in NYC- Actors Access, Casting Networks (whose website is NYCasting.com- not to be confused with NY Castings), Craigslist, and a couple of Forums you can subscribe to for free (ActorsFirstNY through Yahoo and CastingNewYork.com). Some of these have overlap- you might seem the same notices on each site, but there are many other non-union and union notices being posted as well, for both film, theater, commercials and print. I would also suggest sending a headshot and resume to the school(s) you are interested in, addressing it to the head of the film department. Ask them to keep the headshot in their files. Definitely couldn't hurt. Good Luck!

Excellent point. Get the instructor's name. Make sure the instructor has a copy of the agreement you make with the student which states that you will receive a copy instead of pay...When the student's ask you to sign a release, make sure IT says you are getting a copy as pay. And yes, many of these film's don't get finished but you will get experience. You can always use the dailies for your reel.
